| Baba Ghanoush
Ingredients:
1 American eggplant; roasted, then peeled
1 lemon, juiced
3 cloves garlic, sliced
1 tsp salt
1 tsp paprika
1 tsp ground cumin powder
¼ cup tahini
Garnish:
Extra virgin olive oil
Chili pepper
Sumac (Rhus coriaria)
Chopped parsley
Mint leaves
Preparation:
After the eggplant has been roasted and grilled, take out the
flesh and put it aside for the moment. Place the salt and sliced
garlic cloves into a mortar and pound with the pestle until the
clove slices are a pulp. Begin adding the spices - paprika and
ground cumin first - then add a portion of the egglant while repeating
the pounding process.
Slowly, continue adding more eggplant and pounding until the
texture is as you like. Add the lemon juice, extra virgin olive
oil, and tahini into the recipe and mix thoroughly. Garnish with
seasonings and more olive oil if desired.
